Tell us about this lamb ragu & nood.
When I was trying to decide what pasta dish I wanted to make for Dijon, I knew I wanted it to be something handmade and slow. Like what a granny would make you on a Sunday. Luckily enough, I had a lamb leg stashed away in my freezer from my brother's farm and decided to make a lamb ragu with fresh pappardelle pasta. I still dream about this meal.
As someone who sells pasta for a living do you eat it every single day?
Absolutely...not. I mean I kind of wish I did but there's just too much good food out there! But pasta is still my one true love.
What’s your favourite thing about your home?
Being able to personalize it. There's something pretty special about loving the space you're in so I've worked hard at making sure that I feel that while I'm at home. I need to be constantly inspired so music is always playing, cookbooks are always open, flowers & plants are everywhere, and I love being in the garden.
What’s your favourite noodle?
That's like picking your favourite kid. But if I had to choose a long noodle it would be either bucatini or pappardelle. If I was to pick a short noodle, easily my top two would be a hand rolled cavatelli or rigatoni. All great for capturing sauce in their own way.
Where you learn to noodle so good?
Lol. How did you know my nickname was noods (short for noodles)? But in all seriousness, I learned a lot from working at Harth in Winnipeg but also a lot of practice and research at home. Before I started Made by Paste, I was making pasta at least 3 times a week and reading about different shapes and specific doughs.
It’s Judy’s birthday and let’s pretend dogs aren’t allergic to a million foods… what you making her?
Judy would definitely want a cheese pizza. Like Kevin McCallister on Home Alone. Or I would make her a dim sum feast.
